Fast and Easy Keto Almond Milk Chocolate Pudding

Keto Chocolate Pudding, my husband loves this low carb dessert, its easy to make and fast, I hope you try it and let me know how it turned out.

Ingredients:

  1. 3 cups Almond milk
  2. 1/2 cup Granulated sugar substitute (I used swerve)
  3. 4 egg yolks
  4. 1/2 tsp xanthan gum
  5. 1/3 cup unsweetened cocoa powder
  6. 3 tbs unsalted cubed butter
  7. 1/2 tsp fresh vanilla beans
  8. Whipped cream(optional)
  9. Crushed pistachios (optional)
  10. Raspberries (0ptional)
Direction: 

 

  1. Whisk almond milk and sweetener (I used swerve granular) in a sauce pot turn on medium heat and bring to a simmer
  2. In a bowl whisk egg yolks, then when milk mixture has simmered, slowly whisk about couple of ladles of the hot milk mixture into the yolks to temper, then slowly whisk tempered yolks back into the original sauce pot.
  3. Reduce heat to medium low and sift in unsweetened cocoa powder and xanthan gum and whisk fast to combine.
  4. Add butter and 10 drops of liquid stevia, and continue to whisk for up to 5 minutes until pudding has thickened and can coat a spoon, also note the more it cools the more it gets thicker (that the xanthan gum working).
  5. Pour in small 4 oz containers and refrigerate.
  6. Meanwhile whisk some heavy whipping cream with powdered sweetener (I used Powdered swerve) and fresh vanilla beans.
  7. Top with whipped cream, pistachios and raspberries before serving.
